Machine Shed celebrates National Pork Month

Every October, The Machine Shed restaurants pay special homage to the pork they are so very proud of serving.

This October, each Machine Shed restaurant is featuring special pork dishes created by the company’s six executive chefs, including Caramel Apple Pork Chops with Apple Raisin Stuffing, created by Bryan Tyler, executive chef Davenport Machine Shed restaurant.

The dish features 6-ounce chops basted and broiled in a brown-sugar-and-spiced syrup full of fresh apples, and served two per plate over a mound of apple-raisin bread stuffing.

Tyler will share this recipe at a special cooking class at 7 p.m. Wednesday, Oct. 18, at the Davenport Machine Shed. Those attending the class will learn how to create the pork dish and receive a free “Hog Wild about Pork” cookbook.

Other featured recipes are Boneless Pork Chop Newton with Maytag Blue Cheese Sauce; Sautéed Pork Tenderloin with Winter Fruit Sauce.; Butter-Crusted America’s Cut Pork Chops with Béarnaise Sauce; Honey Pecan Pork Loin with Dijon Sauce; and Spinach & Wild Rice Pork Loin Roulade.

Centro Davenport cooks up classes

Due to popular demand, Centro Davenport will continue to offer their monthly cooking demonstrations, Cooking with George Formaro, chef and owner of the restaurant.

The themed classes are held in Centro restaurant, 131 W. 2nd St., and include the cooking demo, wine pairings, dinner and a recipe booklet and cost $45. The events are held from 2:30-5:30 pm. on Sundays. Class sizes are limited and reservations are needed.

The first class is Mama’s Family-Style Dinner— an evening to recreate the tradition of big family dinners and the passing down of treasured recipes and cooking techniques — and will be Oct. 8.

Dec. 3: Entertaining I Holidays & Special Occasions

Jan. 7: Entertaining II Casual Events

Mushroom Council seeks recipes for contest

The National Mushroom Council wants to know how Americans use mushrooms in their favorite dishes and will award $5,000 to the winner of its “Make it With Mushrooms” contest.

Entrants can send in their favorite recipes using mushrooms prepared in any way or a separate category of an everyday dish using sauteed mushrooms. The top choice in  each category will receive $1,000 with the overall winner earning the $5,000 grand prize.
